1 cup oat flour 1/2 cup protein powder 1 cup mashed banana 1 tsp baking powder 1/3 cup runny peanut butter 1/4 cup yogurt (use dairy-free yogurt for vegan option) 1/2 cup chopped walnuts
Instructions
preheat your oven to 350°f (175°c). line a baking sheet with parchment paper or lightly grease it.
in a food processor, combine oat flour, protein powder, mashed banana, baking powder, peanut butter, and yogurt. blend until a smooth dough forms.
add chopped walnuts to the dough in the food processor. pulse a few times to incorporate the walnuts evenly into the dough.
using a large ice cream scooper that's been lightly oiled, scoop out portions of the dough onto the prepared baking sheet. you should be able to make about seven cookies.
with slightly wet hands, flatten each ball of dough into a cookie shape. the dough will be sticky, so wetting your hands will prevent it from sticking too much.
place the baking sheet in the preheated oven and bake for about 18 minutes, or until the cookies are lightly golden brown around the edges.
once baked, remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
