Energy Bites
3/4cuproasted pistachios
1/2cuppumpkin seeds
1/3cupcollagen powder
1/4cuprunny almond butter
1cuppitted Medjool dates
1/4cupgluten-free oat flour
2–4 tablespoons milk of choicestarting with 2 tablespoons
1teaspoonvanilla bean paste
Pinchof sea saltif using unsalted pistachios
Chocolate Coating
3/4cupdate-sweetened or coconut sugar-sweetened chocolate chips
1teaspooncoconut oil
Instructions
Add the pistachios and pumpkin seeds to a food processor and pulse until finely chopped.
Add the collagen powder, almond butter, Medjool dates, oat flour, vanilla bean paste, and sea salt. Process until the mixture begins to come together.
Add 2 tablespoons of milk and process again. If the mixture seems too dry, add additional milk, 1 tablespoon at a time, until a sticky dough forms.
Roll the mixture into 9 equal-sized energy bites and place them on a parchment-lined plate or baking sheet.
Melt the chocolate chips and coconut oil together in 20-second intervals in the microwave, stirring between each interval until smooth.
Dip each energy bite into the melted chocolate or drizzle the chocolate over the tops.
Freeze for 15–20 minutes, or until the chocolate has set.
