Ingredients
peaches
2 small-medium peaches cut into slices
2 tbsp avocado oil
1 tbsp date syrup
1 tsp cinnamon
1/2 tsp vanilla extract
oatmeal
1 cup old fashioned oats
1.5 cups unsweetened almond milk (any dairy free works)
1 cup water
2 tbsp heavy coconut cream or vegan cheese. other option: 1/4 cup creamy dairy free yogurt
peanut butter caramel
2 tbsp peanut butter
2 tbsp maple syrup
Instructions
for the peaches, add all of the ingredients to a pan and sauté in a couple of tbsp of avocado oil for 4 minutes on medium heat. stir often to avoid burning.
for the oatmeal, add the oats, 1 cup of water, 1 cup of almond milk and optional add ins to a pan.
once it comes to a boil, cook for 7 minutes (or until liquid is mostly absorbed) on medium heat and stir often.
after the oats are done cooking, add another 1/2 cup almond milk and the coconut cream or cream cheese.
top with the peaches and peanut butter caramel + any other toppings you would like!
