Ingredients
1 cup gluten free oats
3 scoops vanilla protein (used garden of life brand)
8 large pitted medjool dates
3/4 cup creamy peanut butter
1/2 cup +2 tbsp dairy free milk
1 tsp vanilla extract
1/4 cup thick dairy free yogurt
1/2 cup mini chocolate chips
3/4 cup chocolate chips + 1 tbsp coconut oil melted
Instructions
add all ingredients but the chocolate chips to a food processor and blend until a thick and grainy cookie dough forms.
then, transfer to a bowl and fold in the chocolate chips.
use a large ice cream scoop to evenly distribute the dough into cookies.
melt the chocolate chips and coconut oil and dunk the cookies in the mixture. place in the freezer for 30 min to harden and enjoy.
store in the fridge or freezer in an airtight container and enjoy.
