Ingredients
base layer
3/4 cup medjool dates
1/2 cup oats
1/3 cup dessicated coconut
1/8 cup dairy free milk (add more if base is too dry)
filling
1 and 1/2 overripe bananas
2 scoops banana or vanilla protein powder
1 tsp vanilla extract
1/4 cup dairy free milk
1 cup vegan whipped cream (see text for subs)
top with vegan whipped cream
Instructions
add the base layer ingredients to a food processor and blend until a thick, sticky and grainy consistency forms that is well combined.
add to parchment paper muffin cups.
blend the filling ingredients in a food processor or blend until the mixture is thick and creamy.
pour on top of the base layer and fill to the top.
freeze for several hours, top with whipped cream and enjoy.
store in the freezer in an airtight container and thaw before eating.
