Instructions
in a large mixing bowl, combine almond flour, gluten-free oat flour, flax meal, runny sunbutter, cocoa powder, dairy-free milk, vanilla extract, maple syrup, and vegan chocolate chips.
mix the ingredients until well combined, forming a dough-like consistency. scoop out portions of the mixture and roll them into 9 evenly sized balls.
place the formed balls on a parchment paper-lined tray and transfer to the freezer for at least one hour to firm up.
while the brownie bites are in the freezer, melt additional vegan chocolate chips with coconut oil for coating. to determine the amount needed, consider that you'll be coating 9 brownie bites. start with around 1 cup of chocolate chips and melt more if needed.
once the brownie bites are firm, remove them from the freezer. dip each brownie bite into the melted chocolate, making sure to coat them completely.
place the coated brownie bites back on the parchment paper. allow the chocolate coating to set by placing the tray back in the freezer or refrigerator for about 20-30 minutes.
