Ingredients
1cupcottage cheese
4large eggs
2tbspavocado oil or olive oil
1tbspapple cider vinegar
3/4cupgolden flax meal
3/4cupalmond flour
1/2cupoat flour
1tbsppsyllium husk powder
1 1/2tspbaking powder
1/2tspbaking soda
1/2tspsalt
Instructions
Preheat oven to 350°F. Line a loaf pan with parchment paper.
Add cottage cheese, eggs, oil, and apple cider vinegar to a food processor or blender. Blend until smooth.
Add flax meal, almond flour, oat flour, psyllium husk, baking powder, baking soda, and salt. Pulse until just combined.
Pour batter into loaf pan and smooth the top.
Bake for 42 to 45 minutes, or until domed, golden, and center is set.
Cool completely before slicing.
