2 cups organic rolled oats 1/2 cup vanilla protein powder 1/4 cup hemp seeds 1/4 cup pumpkin seeds 1/4 cup chia seeds 1/4 cup flax meal 1/3 cup maple syrup 1/4 cup runny nut butter (such as almond or cashew butter) 1/4 cup coconut oil, melted 1 teaspoon vanilla extract
Instructions
preheat the oven: preheat your oven to 325°f and line a baking sheet with parchment paper.
mix dry ingredients: in a large mixing bowl, combine the rolled oats, vanilla protein powder, hemp seeds, pumpkin seeds, flax meal and chia seeds. stir well to combine.
prepare wet ingredients: in a separate microwave-safe bowl, melt the coconut oil. combine the runny nut butter, maple syrup and vanilla extract.
combine wet and dry ingredients: pour the wet ingredients over the dry ingredients in the mixing bowl. use a spatula to fold and mix until all the dry ingredients are evenly coated with the wet mixture.
bake: spread the granola mixture evenly onto the prepared baking sheet. bake in the preheated oven for 25 minutes, or until the granola is golden brown.
cool: allow the granola to cool completely on the baking sheet. it will continue to crisp up as it cools.
serve or store: once cooled, break the granola into clusters of desired size. enjoy as cereal or on it's own. store in an airtight container at room temperature for up to two weeks, or in the refrigerator for longer freshness.
