1cuprolled oats
1/4cupcoconut cream
1/3cupvanilla protein powder
1cupnon-fat cottage cheese
2tbsphoney
1/2tspvanilla extract
1/4tspalmond extract
1 1/2cupsunsweetened almond milk
1/2cupchia seeds
For Topping
1/3cupslivered almonds
Dusting of Lakanto powdered sugar
Instructions
Add the rolled oats, coconut cream, vanilla protein powder, cottage cheese, honey, vanilla extract, almond extract, and almond milk to a blender. Blend until completely smooth and creamy.
Pour the mixture into a large bowl or container and fold in the chia seeds until evenly combined.
Cover and refrigerate for at least 4 hours, or overnight, until thickened.
