Ingredients
1 cup + 3 tbsp gluten free all purpose flour
1 cup almond flour
1 tsp baking powder
1/3 cup coconut sugar
1/2 tbsp cinnamon
1 flax egg (1 tbsp flax meal +3 tbsp water)
1/3 cup applesauce
1 tsp vanilla extract
1/2 cup unsweetened dairy free milk
coconut sugar and cinnamon for topping (2-3 tbsp coconut sugar + 1/2 tsp cinnamon)
Instructions
preheat the oven to 350 degrees.
mix the cake ingredients together in a bowl until a thick mixture forms. transfer to a greased 8 x 8 cake pan.
top with the cinnamon sugar mixture and bake at 350 degrees for 23-25 minutes.
top with a glaze or runny peanut butter and enjoy!
store in the fridge or freezer in an airtight container.
