Instructions
in a food processor, blend together the vanilla protein powder, pitted medjool dates, unsweetened sunbutter or almond butter, freeze-dried blueberries, flax meal, vanilla extract, and dairy-free milk until a thick dough forms. you may need to scrape down the sides of the food processor and blend again to ensure all ingredients are well combined.
if the mixture seems too dry, you can add a little more dairy-free milk, a tablespoon at a time, until the desired consistency is reached.
once the dough is ready, transfer it to a bowl and let it rest for a few minutes.
prepare your silicone donut molds or shape the dough into donuts yourself by forming them into donut shapes with your hands. it's a sticky dough, so manually shaping them is a little harder.
place the shaped donuts into the freezer and let them freeze for at least 2 hours, or until they are firm.
while the donuts are freezing, prepare the glaze. in a small saucepan, combine the lakanto powdered sugar and frozen blueberries. cook over low heat, stirring frequently, until the blueberries have melted and the mixture is smooth. remove from heat and let it cool slightly.
once the glaze has cooled a bit, remove the frozen donuts from the freezer and dip the tops of each donut into the glaze, allowing any excess glaze to drip off.
return the glazed donuts to the freezer and let them freeze for an additional 30 minutes, or until the glaze has set.
