Healthy No Bake Banana Peanut Butter Chocolate Bars

Ingredients
peanut butter banana base
1 and 1/2 cups oat flour
1/2 cup coconut flour
3/4 cup runny peanut butter (very important that it's runny. if not add melted coconut oil to thin it out)
2 larger overripe bananas
2 tbsp almond milk
2 large medjool dates
2 tsp vanilla extract
chocolate coating
1 and 1/4 cup dairy free dark chocolate chips
2 tbsp coconut oil
1/2 tsp vanilla extract
Instructions
add all of the base layer ingredients to a food processor and blend until a very thick dough forms.
see notes for achieving the perfect texture!
add the dough to a parchment lined 8 x 8 inch square baking pan. place in the freezer for 30 minutes.
then, melt the chocolate chips and coconut oil. next, whisk in the vanilla extract. pour over the base layer and place in the freezer for about 45 minutes
cut into bars- they key to avoid cracks is to cut the bars before the chocolate has turned rock hard. then, place the bars back in the freezer to set for two hours before serving and enjoy!
store in the fridge or freezer in an airtight container. thaw plenty before eating!
