Ingredients
32ozLifeway Farmer’s Cheese
4large eggs
1/2cuphoney
1 1/2tspvanilla extract or vanilla bean paste
1/4cupgluten-free 1:1 flour or oat flour
2tbsptapioca flouror cornstarch
Pinchof sea salt
Optional: 2–3 tbsp Greek yogurt or a splash of milk
For topping:
1/4–1/3 cup honey
Cinnamon
Instructions
Preheat the oven to 325°F and line an 8x8 pan with parchment paper.
Add the farmer’s cheese to a blender or food processor and blend until completely smooth and creamy.
Add the eggs, honey, vanilla, flour, tapioca, salt, and optional yogurt or milk. Blend again just until smooth and combined.
Pour the mixture into the prepared pan and smooth the top.
Bake for 55 minutes, until the edges are set and the center is slightly jiggly but not wet.
Let cool at room temperature, then refrigerate for at least 4–6 hours, preferably overnight.
Drizzle with honey and sprinkle with cinnamon before slicing.
