Ingredients
giant pop tart ingredients
3/4 cup gluten free oat flour
1/2 cup almond flour
1/4 cup flax meal
1/4 cup coconut sugar
1/3 cup runny almond butter (Trader Joe's or whole foods brand is runny)
1 tsp vanilla extract
1/3 cup dairy free milk
filling
1/2 cup coconut sugar
1/8 cup oat flour
1/8 cup avocado oil or coconut oil
1/2 tsp vanilla extract
2 tbsp coconut nectar
1/2 tbsp cinnamon
icing
3/4 cup raw cashews soaked in hot water for 1 hour then rinsed and drained
1/3 cup dairy free milk
1 tbsp coconut nectar
1/2 tsp cinnamon
Instructions
preheat the oven to 350 degrees. mix the pop tart ingredients until a thick dough forms.
roll out into two roughly 1/3 inch thick even squares. mix the filling and disperse it on top of the bottom layer of dough.
place the second layer and top and dip your fork in cooking oil to seal the edges. this way, the dough won't stick to the fork and ruin the pop tart.
bake at 350 degrees for 18 minutes and let it cool down completely. blend the icing ingredients in a blender or food processor, place in the fridge to set for 30 minutes and enjoy!
