Instructions
in a mixing bowl, combine the dairy-free yogurt, vanilla protein powder, date syrup or maple syrup, vanilla extract, and peanut butter. mix well until smooth and creamy.
add 1-2 tablespoons of chocolate chips to the creamy mixture and fold them in gently until evenly distributed.
spoon the creamy mixture into parfait jars or bowls, filling them about halfway.
in another bowl, prepare the cookie dough layer by mixing together almond flour, peanut butter, date syrup or maple syrup, and chocolate chips until a dough-like consistency forms.
roll the cookie dough mixture into small balls and place them on top of the creamy layer in the parfait jars or bowls.
if desired, drizzle melted chocolate over the top of the parfait for an extra decadent touch.
serve immediately or refrigerate for later. enjoy your creamy and fluffy protein cookie dough parfait!
