1 small finely diced onion a few minced cloves of garlic sea salt and pepper to taste 1 1/2 finely sliced carrots 1/4 cup extra virgin olive oil 16 ounces frozen peas 30 ounces tomato sauce 2 tbsp tomato paste 1 cup vegetable broth fresh dill, chopped (a few tbsp or more)
Instructions
in a pan, sauté the diced onion, minced garlic, sea salt, pepper, and sliced carrots in 1/4 cup extra virgin olive oil for 7-10 minutes on medium heat, or until tender.
add the frozen peas and sauté for another few minutes.
pour in the tomato sauce, add tomato paste and vegetable broth.
cook on medium-low heat with a lid on for about 45 minutes, stirring often to prevent burning or sticking to the bottom of the pan.
turn off the heat and stir in a few tablespoons (or more) of chopped fresh dill.
