Ingredients
1 cup oat flour
1/2 cup almond flour
1 tsp baking powder
1/2 tbsp vanilla extract
1/4 cup applesauce or mashed banana
1/4 cup creamy/runny peanut butter (trader joe's brand is great)
3 tbsp organic cane sugar, coconut sugar or lakanto
1/4 cup unsweetened dairy free milk (used almond)
pinch of sea salt
store bought chocolate frosting for filling- see text for brand used
Instructions
preheat the oven to 350 degrees.
mix the dry ingredients and then add in the wet ones. mix well until a thick batter forms.
scoop a heaping tbsp of dough onto a parchment lined baking tray and shape into a cookie. ever so slightly wet your hands to mold/press down the dough into a cookie shape (dough is slightly sticky).
bake at 350 degrees for 12 minutes. let the cookies cool down completely and then add a tbsp or two of frosting to the center. store in the fridge in an airtight container and enjoy!
