Ingredients
9 pitas of your choosing
village salad
2 cups cherry tomatoes cut into quarters
one large cucumber cut into quarters
6 ounces vegan feta
1 cup pitted Kalamata olives
1 green bell pepper cut into small pieces
1 can rinsed and drained chickpeas
vinaigrette
1/4 cup extra virgin olive oil
3 tbsp red wine vinegar
2 grated garlic cloves
1 tsp dried oregano
sea salt and pepper to taste
vegan tzatziki
1 and 1/4 cup thick coconut yogurt
juice of one small lemon
1/2 tbsp dried dill weed
sea salt and pepper to taste
Instructions
mix the village salad ingredients together well until everything is coated with the vinaigrette.
whisk the tzatziki ingredients until a thick and creamy texture forms.
add a generous amount of tzatziki to the inside of a pita and then fill with the Greek village salad also.
store the salad and tzatziki in an airtight container in the fridge. do not fill pitas until ready to eat.
