The Ultimate Vegan Blueberry Crumble

Ingredients

- 4 cups frozen blueberries (used wild blueberries)
- 2 tbsp gluten-free all purpose flour
- 1/2 tsp cinnamon
- 1 tsp vanilla extract
crumble topping
- 1 cup old fashioned oats
- 7 large pitted medjool dates
- 1/4 cup melted vegan butter
- 1/4 cup peanut butter
- 1/4 cup gluten free all purpose flour
- 1/4 tsp cinnamon
- 3 tbsp dairy free unsweetened milk
Instructions
- preheat the oven to 350 degrees. mix the blueberry filling in a bowl until the blueberries are covered with flour.
- for the crumble topping, add all ingredients to a food processor and blend until a thick dough forms. add the filling to a baking dish (used a pie baking dish) and top with the crumble.
- bake at 350 degrees for 26 minutes. serve with your favorites and enjoy!
