Sticky Peanut Miso Maple Glazed Brussels Sprouts (Oil-Free!)

Ingredients
2 lbs brussels sprouts, trimmed and halved for the sticky peanut miso maple glaze 3 tbsp white or yellow miso paste 1/4 cup pure maple syrup 4 tbsp creamy peanut butter 2 tbsp rice vinegar or apple cider vinegar 2 tbsp liquid aminos or soy sauce 2 tsp garlic powder pinch of red pepper flakes (optional, for heat) sea salt and black pepper, to taste 1/4-1/3 cup water, as needed, to thin the glaze
Instructions
steam the brussels sprouts: fill a large pot with about 1 inch of water and place a steamer basket inside. bring the water to a boil, then add the brussels sprouts. cover and steam for 6-7 minutes until they're just tender but not mushy. remove from heat and set aside to cool slightly.
make the sticky peanut miso maple glaze: in a medium bowl, whisk together the miso paste, maple syrup, peanut butter, vinegar, liquid aminos, garlic powder, and red pepper flakes (if using) until smooth. add water a tablespoon at a time until the glaze is thick but very pourable.
coat and roast: preheat your oven to 400°F and line a baking sheet with parchment paper if wanted
transfer the steamed brussels sprouts to a large bowl, add the 3/4 of the sauce. spread them out on the prepared baking sheet in a single layer.
roast for 25 minutes, flipping halfway, until they're golden and slightly crispy.
finish with remaining glaze: remove from the oven, drizzle the remaining glaze, and toss to coat. season with sea salt and black pepper to taste.
