prepare ingredients: ensure the banana and riced cauliflower are frozen. chop the mint leaves.
blend base ingredients: in a high-speed blender, add the spinach, chopped mint leaves, frozen banana, frozen riced cauliflower, vanilla protein powder, and coconut yogurt.
add liquid: pour in 1/2 cup of dairy-free milk to start. you can add more later if the smoothie is too thick.
blend smoothie: blend on high until the mixture is smooth and creamy. if the smoothie is too thick, add more dairy-free milk a little at a time until you reach the desired consistency.
incorporate chocolate chips: add the chocolate chips to the blender and pulse a few times to mix them in, leaving some small chunks for texture.
serve: pour the smoothie into a glass. you can top with a few extra chocolate chips or a sprig of mint for garnish if desired.
