Ingredients
15 ounces shredded common curly kale and 1 tbsp avocado oil for massaging
1 cup roasted chickpeas (used saffron roads brand)
dressing
handful fresh cilantro
1/4 cup + 1 tbsp runny peanut butter
1/2 tbsp minced garlic
2 tbsp liquid aminos
1/2 tsp fresh minced ginger
1 tsp onion powder
1 tbsp sesame oil
1 tbsp dijon mustard
1 tbsp rice wine vinegar
1/4 cup water
Instructions
see text for massaging kale. after that's done, add all dressing ingredients to a food processor and blend until a smooth consistency forms.
add the chickpeas to the kale and pour the dressing over top.
mix well until everything is well combined.
store in the fridge in an airtight container and enjoy!
