If you love the rich almond filling inside a bakery-style almond croissant, these no bake protein almond croissant bars are going to completely obsession-worthy.

Ingredients
For the Bars
1 1/4cupsalmond flour
2/3cupvanilla protein powder
1/2cuprunny cashew butter or tahini (almond works too)
1/3cupmaple syrup
1/3cupmelted butter or vegan butter
1/2tspalmond extract
1tspvanilla extract
2tbspalmond milk or milk of choice
For Topping
1/3cupslivered almonds
powdered sugar or powdered monk fruit sweetener for dusting
Instructions
Line a loaf pan or small square pan with parchment paper.
Add all bar ingredients to a mixing bowl and stir until a thick dough forms. If the mixture feels too dry, add another splash of milk. If too sticky, add a little more almond flour.
Press the mixture firmly into the prepared pan.
Top with slivered almonds, gently pressing them into the top.
Refrigerate for at least 2-3 hours or freeze for 1 hour until firm.
Dust generously with powdered sugar or powdered monk fruit sweetener before slicing into bars.
