sourdough bread cubes

sliced leeks
washed well
Handful chopped fresh dill
Handful chopped fresh parsley

cottage cheese

milk of choice

shredded sharp cheddar
divided

garlic puree or minced garlic

teaspoon
Dijon mustard

tablespoon
butter or olive oil

teaspoon
sea salt

teaspoon
black pepper
Instructions
Preheat oven to 375°F. Grease an 8x8 baking dish.
Heat butter or oil in a skillet. Sauté leeks 6–8 minutes until softened. Add garlic and cook 30 seconds.
Add bread cubes to dish. Scatter in leek mixture, dill, parsley, and 3/4 cup cheddar.
Blend eggs, cottage cheese, milk, Dijon, salt, and pepper until smooth.
Pour mixture evenly over bread. Press bread down gently and let soak 10–15 minutes.
Top with remaining cheddar.
Bake 40 minutes and rest 10–15 minutes before slicing.
