High-Protein Frozen Peanut Butter Graham Cracker Bars

Ingredients
Graham Cracker Layers
9–10 organic or healthier graham crackers of choiceenough to fit an 8x8-inch pan
Protein Cream Layer
18 oz tub CocoWhip or TruWhip, thawed
1/2cupvanilla protein powder
1tspvanilla bean paste
Peanut Butter Layer
2/3cupnatural creamy peanut butter
1tbsppure maple syrup
1tspvanilla bean paste
1/2tbspcoconut oilmelted
Chocolate Coating
2/3cupcoconut sugar-sweetened dark chocolate chips
1tspcoconut oiloptional, for smoother melting
2tbspcrushed roasted peanuts
Instructions
Line an 8x8-inch baking pan with parchment paper, leaving an overhang for easy removal.
Arrange 9–10 graham crackers in a single layer, breaking a few if needed to cover the bottom of the pan.
In a medium bowl, fold together the CocoWhip (or TruWhip), vanilla protein powder, and vanilla bean paste until smooth and fluffy.
Spread evenly over the graham crackers.
Freeze for 2 hours, or until completely firm.
In a small bowl, stir together the peanut butter, maple syrup, vanilla bean paste, and melted coconut oil until smooth and creamy.
Once the protein layer is completely frozen, gently spread the peanut butter mixture evenly over the top. Be sure the whipped layer is fully set so the peanut butter stays as its own layer instead of sinking into it.
Arrange the remaining graham crackers over the peanut butter layer, gently pressing them into place.
Freeze for another 4 hours, or overnight for the cleanest slices.
Lift the bars out using the parchment paper and cut into 9 squares.
Melt the chocolate chips (with the optional teaspoon of coconut oil if desired) until smooth.
Dip or drizzle each frozen bar with the melted chocolate, then immediately sprinkle with crushed peanuts.
Return to the freezer for about 10–15 minutes, or until the chocolate is set.
Enjoy straight from the freezer, letting the bars sit at room temperature for 2–3 minutes before serving for the perfect texture.
