cut the tofu into squares that are about 1/2 inch thick. add the bread, herbs, garlic and sea salt to a food processor and blend until a fine and grainy consistency.
coat the tofu in garbanzo bean flour and shake off the excess. then dunk the tofu in vegetable broth.
transfer to the garlic sage and thyme bread mixture and ensure each piece is well-coated. you can also shake off any excess.
bake on a parchment lined baking tray for 20 minutes at 400 degrees. gently flip after 20 minutes and bake another 10 minutes.
serve with your favorite side dishes and enjoy! store in the fridge in an airtight container.
