Ingredients
2 medium-sized mashed overripe bananas (or substitute 1/2 cup pumpkin puree) 1/2 cup runny peanut butter or almond butter 1/2 cup dairy-free milk 1 tsp vanilla extract 1/3 cup coconut sugar 2/3 cup cocoa powder 1/3 cup flax meal 1 tsp baking powder 1 tbsp tapioca flour (cornstarch or arrowroot works too) 1 cup almond flour 1/3 cup all-purpose gluten-free flour 1/2 cup chocolate chunks
Instructions
preheat the oven to 350 degrees fahrenheit.
in a mixing bowl, combine all the batter ingredients until a thick batter forms. gently fold in the chocolate chunks.
transfer the batter to a greased or parchment-lined bread loaf pan.
bake in the preheated oven for 45 minutes, or until a toothpick inserted into the center comes out clean.
remove from the oven and let it cool completely in the pan.
once cooled, carefully remove the bread from the pan and slice it into desired portions.
serve and enjoy! store in the fridge or an airtight container at room temperature for up to three days.
