Ingredients
4large eggs
¾cupplain 0% Greek yogurt
1cupgluten-free 1:1 baking flour
1tbspbaking powder
½tspgarlic powder
½tsponion powder
½tspsea salt
¼tspblack pepper
1packed cup fresh spinachvery finely chopped
¾cupcrumbled feta cheese
½cupshredded mozzarella cheese
⅓cupfresh dillfinely chopped
¼cupgreen onionsfinely sliced
handfulfresh chopped parsley
Instructions
Preheat the oven to 400°F and line a baking sheet with parchment paper.
In a large mixing bowl, whisk the eggs well until slightly frothy. Add the Greek yogurt and whisk until combined.
Add the gluten-free flour, baking powder, garlic powder, onion powder, sea salt and black pepper. Mix just until a thick batter forms.
Fold in the raw chopped spinach, feta, mozzarella, fresh dill and raw green onions until evenly distributed.
Divide the batter into 7 large, tall mounds on the prepared baking sheet. Avoid flattening them too much so they can puff as they bake.
Bake for 22 minutes, or until puffed, lightly golden and completely set through the centers.
Allow the biscuits to cool for 5–10 minutes before serving. They will continue to set slightly as they cool.
