Ingredients
2 cans of young green jackfruit in brine or water (drained and rinsed) A few tablespoons of olive oil 1 teaspoon cumin 1/2 teaspoon chili powder 1 teaspoon dried oregano 1 teaspoon onion powder 1 teaspoon garlic powder Red onions, thinly sliced Kalamata olives, pitted and sliced Cucumber, thinly sliced 3 large russet potatoes peeled and cut into fries Olive oil (for coating) Sea salt (to taste)
For the homemade tzatziki: 1 cup thick coconut yogurt 1 and 1/2 tablespoons very finely minced garlic Juice of 1/2 a small lemon 1/2 tsp dried dill 2 tablespoons fresh chopped dill Sea salt and pepper to taste
Instructions
Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius) for the fries.
While the jackfruit is marinating, prepare the fries. Wash and peel the russet potatoes, then cut them into thin strips. Place the potato strips in a large bowl and coat them with olive oil and a sprinkle of sea salt. Toss the fries to ensure even coating.
Spread the seasoned fries in a single layer on the prepared baking sheet. Make sure there is some space between each fry to allow for even cooking.
Bake the fries in the oven for about 25 minutes or until they are golden brown and crispy. You may want to flip the fries halfway through the baking time to ensure they cook evenly.
Prepare the seasoned jackfruit. You can cut the jackfruit into thinner pieces if they're too thick. In a bowl, combine the drained and well rinsed jackfruit with olive oil, cumin, chili powder, dried oregano, onion powder, and garlic powder. Mix well, ensuring the jackfruit is evenly coated with the seasonings.
Preheat your air fryer to 380 degrees Fahrenheit. Air fry the jackfruit for 10 minutes, making sure to flip the jackfruit halfway through the cooking time.
While the jackfruit and fries are cooking, prepare the homemade tzatziki sauce. In a separate bowl, combine the thick coconut yogurt, minced garlic, lemon juice, dried dill and fresh chopped dill, sea salt, and pepper. Mix until everything is well incorporated. Adjust the seasoning to your taste.
Serve your Delicious Vegan Greek Gyros with the crispy fries. To assemble your gyros, take a warm pita or flatbread and place a generous portion of the air-fried jackfruit in the center. Top the jackfruit with slices of red onions, kalamata olives, and cucumber for a burst of freshness and crunch.
Drizzle a generous amount of the homemade tzatziki sauce over the toppings. Serve the gyros with a side of the crispy fries!
