chocolate chips to add at the end after the granola cools down if you would like!
Instructions
preheat the oven to 325 degrees.
mix the oats and nuts together in a large mixing bowl. then, add 3/4 of the mixture to a food processor and pulse for about 5 seconds. this should break apart most of the nuts and oats, but some will still be whole, which is totally fine!
add the pulsed portion back to the other 1/4 and mix well.
for the wet ingredients, blend the banana, melted coconut oil and maple syrup in a blender until a thick and smooth consistency forms.
pour over the oats and nuts and then you can add the cinnamon too. mix thoroughly so everything is evenly coated.
transfer to a parchment lined baking tray and make sure the granola is compact. you want it to look like one large rectangle to form the clusters. it should be about 1/3 inch thick.
bake for 25 minutes at 325 degrees and then let the granola cool at least 30 minutes. break apart into clusters and enjoy! i store mine in the fridge in an airtight container.
