2 cups gluten free old fashioned oats (see text for brand)
1/2 cup runny peanut butter
1/3 cup maple syrup
1/4 tsp almond extract
1/2 tsp vanilla extract
1/3 cup mini dairy free chocolate chips
chocolate coating
1/2 cup chocolate chips
1 tbsp coconut oil
Instructions
add the bar ingredients to a food processor and blend until a sticky, grainy consistency forms. the dough should stick together completely.
then, transfer to a bowl and fold in the mini chocolate chips.
place in a parchment lined bread loaf pan and evenly distribute.
melt the chocolate coating layer and then pour over the bars. place in the freezer about 30-45 minutes and cut into bars. TIP: you don't want the chocolate to be too hard or it will crack- it shouldn't be quite frozen when you cut into it.
then, place the bars back in the freezer for 10 minutes or so until the chocolate completely hardens.
