For the Donuts
1/2cup4% cottage cheese
4large Medjool datespitted
1/4cupnatural almond butter
1tablespoonpure maple syrupstart with one, blend, test dough and add more if wanted
3scoops Truvani Vanilla or Chocolate Protein Powder
1/4cupcollagen powder
1/2cupunsweetened cocoa powder
3/4cupgluten-free oat flour
2tablespoonsground flaxseed
1tbspmilk of choicerecommend adding after blending the ingredients to assess dough texture. add as needed
Chocolate Topping
3/4cupdark chocolate chips sweetened with coconut sugar or dates
1teaspooncoconut oiloptional
Instructions
How to Make Chocolate Glow No-Bake Protein Donuts (see text for tips on dough)
Add the cottage cheese, dates, almond butter, and maple syrup to a food processor. Blend until completely smooth.
Add the protein powder, collagen, and cocoa powder. Blend again until combined.
Add the oat flour and flaxseed. Pulse until a thick cookie dough forms. Stop once the dough comes together into a ball.
Divide into 8 equal portions. Using slightly damp hands, roll each into a ball, flatten gently, and create a hole in the center to form a donut.
Freeze for one hour.
Melt the chocolate chips (with coconut oil if using) until smooth and dip or drizzle the donuts.
Return to the freezer for 30 minutes until the chocolate sets.
