Vegan White Chocolate Peppermint Bites

Vegan White Chocolate Peppermint Bites are the perfect little treats to have on hand this holiday season!

the bites are the perfect dessert or snack to store in the fridge or freezer!

oh, not to mention, they’re so cute, festive and really easy to make.

Vegan White Chocolate Peppermint Bites would be super fun to make with your kids, just be sure to let the chocolate cool down!

vegan white chocolate is sort of hard to come by, but there are two brands that are stocked in some grocery stores AND found online.

the two types of vegan white chocolate that i recommend are Pascha and Evolve!

both taste amazing and you’re going to need about 5 ounces or roughly, two bars.

since vegan white chocolate doesn’t seem to be as thick, i like to dunk the bites twice.

to make the bites extra festive, garnish with some holiday sprinkles and crushed candy canes!

Vegan White Chocolate Peppermint Bites would also make a super cute gift to give someone.

just make sure you keep the bites refrigerated because white chocolate melts very easily.

the center is made with oat flour, almond flour, peppermint extract, almond butter, maple syrup and dairy free milk. that’s it!

it won’t get more simple than that and you can replace the almond butter with any kind of nut butter.

if you do make a swap, i would recommend peanut butter or cashew butter.

personally, i think that peppermint and peanut butter is a delicious combination, but it’s not for everyone!

Vegan White Chocolate Peppermint Bites

Ingredients

  • bites
  • 1 cup almond flour

  • 3/4 cup gluten free oat flour

  • 1/4 cup maple syrup

  • 1/2 cup runny almond butter

  • 1.5 tbsp dairy free milk

  • 1 tsp vanilla extract

  • 1/2 tsp peppermint extract

  • 5 ounces melted vegan white chocolate

Directions

  • mix all bite ingredients together in a bowl until a thick dough forms.
  • then, roll the dough into bites and place in the freezer for 10 minutes.
  • melt the white chocolate completely and evenly coat each bite.
  • place back in the freezer for 30 minutes. remove, add another coat of white chocolate and garnish with sprinkles or vegan crushed candy canes.
  • add back to the freezer for an hour or so to set and enjoy! store in the fridge or freezer in an airtight container and thaw before eating!
