Vegan Sweet Potato Hash is new to the blog but not to my plate. since i went vegan years ago, sweet potatoes have make weekly if not daily occurrences in my meals. i wasn’t the biggest fan of them at first but now i don’t know how i lived without them!
Vegan Sweet Potato Hash can definitely be made with another kind of potato but i recommend sweet potatoes if that’s an option.

pair Vegan Sweet Potato Hash with rice, pasta, quinoa or just eat it as is! it’s definitely a hearty dish that feels super comforting. i think a tofu scramble and toasted slice of sourdough bread would be perfect with this.


an amazing array of spices add an earthy and warming abundance of flavor. cumin, curry and turmeric are the ultimate trio and a little bit of tomato paste really brings it all together.

Vegan Sweet Potato Hash

2 cups diced sweet potato
1 cup diced red pepper
8 oz cremini mushrooms cut into small pieces
1/2 cup chopped onion
1 tbsp garlic minced
2 tbsp avocado oil
1/2 tsp curry powder
1/2 tsp cumin
1/2 tsp turmeric
1/2 tsp pink Himalayan salt
1 tbsp tomato paste
1/2 cup veggie broth
Directions
- sautรฉ the onion, bell pepper, sweet potato, mushrooms and garlic in avocado oil on medium heat for 6 minutes. stir often.
- then, add the spices and tomato paste and cook another 5 minutes.
- lastly, add the veggie broth, stir often and cook seven more minutes.
- serve with rice or eat plain and enjoy!
