Vegan Strawberry Pretzel Ice Cream Pie

good morning from Greece! i may be on vacation but i couldn’t not get you this recipe because it’s just too good!! this is not a traditional take on strawberry pretzel pie, that’s for sure. with my own little healthier ice cream twist, it’s such a cool and delicious recipe.

the base is super simple and made with a few ingredients like vegan oats, vegan butter and pretzels.

you do not need an ice cream maker and the filling is just divine.

you won’t even believe how simple it is either! the most important ingredient is a 10 ounce bag of frozen strawberries.

the base and the filling is sweetened with maple syrup, to be specific, 1/3 cup in each.

this isn’t a super sweet recipe as you can imagine but it does it satisfy a sweet tooth all while feeling like a super light dessert.

you also need vegan coconut yogurt, full fat coconut milk, vanilla extract and dairy free milk!

this will make up the filling along with the frozen strawberries.

while you could say the filling resembles sorbet more than ice cream, we’re just going to go with it because of the creamy components like yogurt and coconut milk.

you will have to let the crust harden a little bit in the freezer, which you can do while you make the filling.

once you add the filling to the top of the pie crust, it takes about 4 hours to freeze completely.

then, we got to dig in and it was magical.

NOTE: you will want to let this thaw a bit before eating because as you can probably imagine, it legit gets frozen.

there’s that perfect balance though when the the filling starts to get ever so slightly melty when you leave it out to thaw a bit.

you can just store the Vegan Strawberry Pretzel Pie in the freezer in an airtight container! we kept a few slices and gave the rest to friends before our trip.

  • old fashioned oats

  • vegan butter

  • lightly salted pretzels

  • maple syrup

  • frozen strawberries

  • full fat coconut milk

  • dairy free yogurt

  • vanilla extract

Vegan Strawberry Pretzel Ice Cream Pie

Ingredients

  • crust
  • 2 cups lightly salted pretzels

  • 1 cup old fashioned oats

  • 1/3 cup maple syrup

  • 3/4 cup melted vegan butter

  • filling
  • 10 ounces frozen strawberries

  • 1/3 cup vegan yogurt (used plain forager)

  • 1/3 cup full fat coconut milk

  • 1/3 cup maple syrup

  • 1/2 tsp vanilla extract

Directions

  • add the crust ingredients to a food processor and then spread into about a 1/3 inch thick crust in a parchment lined cake pan.
  • place in the freezer for 30 minutes.
  • add the filling ingredients to a high power blender and blend until a thick smoothie like consistency.
  • pour on top of the crust and quickly place in the freezer for several hours to harden.
  • cut into slices, thaw a bit before eating and enjoy!
