baked oats have been trending for a while, but that doesn’t stop me from making new and delicious versions like Vegan One Pan Baked Strawberries and Cream Oats. with spring approaching and fresh flavors abundant, Vegan One Pan Baked Strawberries and Cream Oats is such a light yet filling and scrumptious recipe to make.

you can make Vegan One Pan Baked Strawberries and Cream Oats ahead of time and have breakfast prepped for each morning.

if you’re a fan of strawberries and you like vegan cream cheese, then this recipe is for you.

also, the added bonus in here is protein powder, so the oats will keep you full longer.

i went with vanilla protein powder, which is what i recommend using in here to mesh well with the flavors.

delicious foods like runny almond butter and shredded coconut gives the baked oats so much flavor.

while i did use fresh strawberries, you can totally use frozen if that’s what you have on hand. also, if you’re not a strawberry fan, you definitely can use other berries.

blueberries or blackberries would be great subs! in fact, you could do a mixture of berries, that would be delicious.

the recipe isn’t super sweet by any means, i would call Vegan One Pan Baked Strawberries and Cream Oats mildly sweet. you can always drizzle some maple syrup on top!

the recipe is sweetened with 4 tbsp of maple syrup and then depending on what protein powder you use, there may be a sugar sub in that.

as far as vegan cream cheese, you can use whatever you would like!

Trader Joe’s vegan cream cheese is really yummy and so is kite hill, but really anything works.

maple syrup

what i really love about this recipe aside from the amazing ingredients, delicious taste and fabulous texture is the convenience!

you make the baked oats all in one baking pan. everything can be added to the baking pan and you can mix it all together really well.

just clean off the sides with a wet paper towel once you’re done so there’s no crust or random food stuck to the sides.

Vegan One Pan Baked Strawberries and Cream Oats

Ingredients

  • 2 and 2/3 old fashioned oats

  • 2 scoops vanilla protein powder (31 g per scoop)

  • 1/3 cup shredded coconut

  • 1/3 cup runny almond butter

  • 4 tbsp maple syrup

  • 1/2 tbsp vanilla extract

  • 2 and 1/2 cups dairy free milk

  • 1 and 1/2 cups strawberries

  • vegan cream cheese

Directions

  • preheat the oven to 350 degrees.
  • in a 9 x 13 baking pan, mix the baked oats ingredients together until a thick mixture forms that looks like overnight oats.
  • then, fold in the strawberries and smooth out the top. clean the batter off the sides of the baking pan.
  • spread pieces of cream cheese over the top of the oats and bake at 350 degrees for 25 minutes.
  • cool down completely, cut into squares, warm up again if desired and enjoy!
