Vegan Green Goddess Pasta

my Vegan Green Goddess Pasta recipe is extremely easy to make as it mostly entails a simple homemade sauce and whatever pasta you like!

the kale and avocado are packed with antioxidants, vitamin C, and fiber! while the sauce is super nourishing, don’t worry, it lacks no flavor.

fresh lemon juice, creamy avocado, garlic, and nutritional yeast provide most of the flavor profile.

the color is incredible! it’s the most vibrant green and just looks inviting.

i steam the kale for five minutes to make sure it’s tender. this will ensure the bitter taste is minimized.

then, i blend the sauce with minced garlic, onion powder, avocado, nutritional yeast, curry powder, some lemon, and of course sea salt and pepper.

for the liquid, vegetable broth and lemon juice are also added to the sauce.

the ingredients of the sauce give it the most perfect flavor. a little tangy with a slight garlicky kick makes this sauce something you’ll crave!

it’s super decently thick and creamy, so it coats the pasta noodles beautifully!

you can top the finished pasta with some vegan cheese if you like! i prefer feta with the flavors of this sauce.

Ingredients

  • 1 lb cooked pasta of your choosing

  • 1/2 bunch sliced and steamed lacinato kale

  • 1 tbsp minced garlic

  • 1 large avocado

  • 1 tsp onion powder

  • 2 tbsp nutritional yeast

  • 1/2 tsp curry powder

  • 1 tbsp lemon juice

  • 3/4 cup vegetable broth (more to thin out if needed)

  • sea salt and pepper to taste

Directions

  • steam the kale for 5 minutes or until tender.
  • add all sauce ingredients to a blender and mix until a thick and creamy sauce forms.
  • combine with cooked pasta, top with vegan cheese if you’d like, and enjoy!
