nope, it’s not my birthday BUT it was Alex’s two days ago and i think my honey deserves something really good, like Vegan Funfetti Cake with Tofu Frosting! his mom’s birthday was the day before his too, so my in laws came to visit us last weekend to celebrate, which is why i made this cake!
everyone thoroughly enjoyed and my in laws even had it for breakfast the next day! honestly, why not?! it was her birthday and it’s made with much better for you ingredients. basically, if it has sprinkles, count me in because sprinkles just make everything fun.


no birthday is necessary to make this gem though, it’s an awesome weekend treat to have on hand and share with the fam + friends!
the frosting sounds interesting right? tofu? YES! i made a chocolate tofu frosting for The Best Vegan Chocolate Peppermint Cake, which is perfect for the holiday season by the way! this frosting is vanilla flavored and made with tofu, maple syrup, almond milk and vanilla extract….that’s it! easy and you won’t taste the tofu, at least i couldn’t.

oh dang, that looks GOOD! the cake base is almond flour, gf all purpose flour, avocado oil, Lakanto Classic Monkfruit (1:1 Sugar Substitute), and some other yummy ingredients.
it’s such an aesthetically pleasing cake and looks like you could have taken hours to make it. the opposite couldn’t be more true! it’s super easy to put together, made with simple ingredients and the flavor is out of this world.

ahhhhh the texture!! it’s so so soft and melts in your mouth. this recipe makes me so excited for the weekend and all of the colors just brighten the mood. hope you all enjoy this delicious cake and if you make it, be sure to tag me so i can repost :).
Vegan Funfetti Cake with Tofu Frosting

- frosting
14 oz firm tofu
1/2 cup unsweetened almond milk
1/3 cup maple syrup
1/2 tsp vanilla extract
- cake
2 cups almond flour
3/4 cup all purpose gluten free flour
1 tsp baking powder
3/4 cup Lakanto classic Monkfruit Sweetener (white sugar replacement 1:1 subsitute)
1 tsp apple cider vinegar
1 tsp vanilla extract
1 cup unsweetened almond milk
1/3 cup avocado oil
1/3 to 1/2 cup sprinkles
Directions
- for the frosting, add all ingredients to a food processor and blend until the frosting is well combined and smooth.
- for the cake ingredients, mix everything together in a bowl until a batter forms and add to greased cake pan.
- bake at 350 degrees for 30 minutes. then, let the cake cool completely, at least another 30 minutes, which is important so it sets.
- lastly, add the frosting and more sprinkles if you want and enjoy!
