hello hello! happy monday to all of my amazing friends. made ya quite the monday treat, Vegan Fudgy Brownies with Sweet Potato Frosting!! the brownies are a work of art lol, i kid you not. the brownie layer is so moist and fudgy while the sweet potato frosting tastes just like cookie dough.

- almond flour
- oat flour
- cocoa powder
- baking powder
- brown sugar
- vegan sour cream or yogurt (used forager)
- maple syrup
- almond butter
- dairy free milk
- vanilla extract
- white sweet potato

Vegan Fudgy Brownies with Sweet Potato Frosting

Ingredients
- brownies
1 and 1/2 cups almond flour
1/2 cup gluten free oat flour
1 tsp baking powder
1/3 cup brown sugar
1/2 cup cocoa powder
1/3 cup vegan sour cream or yogurt
1/3 cup maple syrup
1/3 cup almond butter
1/2 cup dairy free milk
1/2 cup Endangered Species 75% Oatmilk + Dark Chocolate Chips
- sweet potato frosting
2 cups white sweet potato pieces boiled until tender
1/2 tsp vanilla extract
3 tbsp brown sugar
1/4 cup almond butter
1/4 cup vegan sour cream or yogurt
1/3 cup Endangered Species 75% Oatmilk + Dark Chocolate Chips
Directions
- preheat the oven to 350 degrees.
- mix the wet brownie ingredients together in a bowl and then add in the dry ones. fold in the chocolate chips.
- add to an 8 x 11 baking pan and bake at 350 degrees for 23 minutes.
- let the brownies cool down completely and add the frosting ingredients minus the chocolate chips to a food processor or blender.
- blend until a thick and smooth frosting forms and then fold in the chocolate chips.
- add to the top of the brownie layer and cut into squares. store in the fridge or freezer in an airtight container and enjoy!
