Vegan Fudgy Brownies with Sweet Potato Frosting

hello hello! happy monday to all of my amazing friends. made ya quite the monday treat, Vegan Fudgy Brownies with Sweet Potato Frosting!! the brownies are a work of art lol, i kid you not. the brownie layer is so moist and fudgy while the sweet potato frosting tastes just like cookie dough.

are you a fan of oat milk? if you have tried it on it’s own but not in chocolate, you’re going to be amazed because it makes the chocolate SO DANG CREAMY.

i also used the baking chips in the sweet potato frosting, which is honestly just like cookie dough!! oh my goodness, what a combo.

it’s festive and the natural sweetness of the sweet potato makes the BEST base for a frosting.

ok, so here’s everything you need to make Vegan Fudgy Brownies with Sweet Potato Frosting:

  • almond flour

  • oat flour

  • cocoa powder

  • baking powder

  • brown sugar

  • vegan sour cream or yogurt (used forager)

  • maple syrup

  • almond butter

  • dairy free milk

  • vanilla extract

  • white sweet potato

Vegan Fudgy Brownies with Sweet Potato Frosting

servings yield 10-15 brownies depending on portion sizes

Ingredients

Directions

  • preheat the oven to 350 degrees.
  • mix the wet brownie ingredients together in a bowl and then add in the dry ones. fold in the chocolate chips.
  • add to an 8 x 11 baking pan and bake at 350 degrees for 23 minutes.
  • let the brownies cool down completely and add the frosting ingredients minus the chocolate chips to a food processor or blender.
  • blend until a thick and smooth frosting forms and then fold in the chocolate chips.
  • add to the top of the brownie layer and cut into squares. store in the fridge or freezer in an airtight container and enjoy!
