happy weekend, we made it to FRIYAY, so let’s celebrate with Vegan French Toast Bagel Sandwiches. there’s no better way to brunch, i can promise you that! French toast gets a fabulous makeover and you won’t believe this recipe is VEGAN.
you can make this recipe gluten free too if you use gluten-free bagels. i used dave’s killer bread cinnamon raisin ones, but any will work!
the batter is super simple to put together- you just need minimal ingredients per usual.
tapioca flour and flax meal are the main components of the batter, and the binders to create the crust, so you need both.
the recipe will yield enough for 3 bagels total, aka 6 halves. if you want to serve more people, you can always double the recipe!
the batter isn’t very sweet because the bagels have a little bit of sugar and then i also love to drizzle some maple syrup or agave on top.
plus, if you add some jam, i think the Vegan French Toast Bagel Sandwiches will be plenty sweet!
up to you though, you can always add more maple syrup or agave, but it could change the batter a little!
the bagels are best served right away, but you can store them in the fridge in an airtight container. i just like them fresh so the bagels don’t get soggy.
while these are bagel sandwiches, if they’re as loaded as mine, you may need a knife and a fork hahah.

bagels of your choosing
dairy free milk
agave or maple syrup
toppings of your choosing
super simple, right?! you can find every ingredient at most grocery stores, i bought everything at Publix.
also, i have not tried the recipe with anything other than tapioca flour. you’re welcome to try something else but the recipe might not turn out the same.

Vegan French Toast Bagel SandwichesCourse: Breakfast, DessertsDifficulty: Easy
3-6 servings depending on serving size (whole or half bagel)
- 3 vegan bagels of your choosing
1/3 cup tapioca flour
1/3 cup flax meal
2 tbsp agave or maple syrup
1 tsp cinnamon
1 tsp vanilla extract
2/3 cup + 2 tbsp dairy free milk
- oil for frying the bagels- i used coconut oil
- toppings of your choosing- used peanut butter, strawberry jam, bananas and strawberries
- whisk the batter ingredients together and let the batter set for a few minutes.
- coat the bagel halves well and fry on medium-low heat in cooking oil for 3 minutes on each side. if possible, it’s best to use non-stick.
- add your favorite toppings and enjoy!
- store in the fridge in an airtight container.
