Vegan Chocolate Chip Cookies and Cream Cake

ah, hello my friends, are you ready for Vegan Chocolate Chip Cookies and Cream Cake because i was not prepared for something so delicious. this cake really is out of this world in every way possible. the taste is not only heavenly, but the texture has amazing variety. from the dense, yet soft cake to the hard cookies and cream cookies, there’s nothing but bliss all around.

you’re going to absolutely love Vegan Chocolate Chip Cookies and Cream Cake. if you have a birthday coming up, let this be your cue to make a birthday cake.

promise that it’s one of the easiest homemade cakes you will ever try.

all you’re going going to need is one bowl, the cake batter ingredients, cookies and cream store bought cookies, chocolate chips and a vegan chocolate hazelnut spread for the topping.

you don’t have to use a vegan chocolate hazelnut spread though, frosting will work just fine.

this recipe is an absolute splurge, there’s no doubt about that, but i love lightening up classics. this definitely is made with better for you ingredients.

the cake base is simply made with almond flour, oat flour, maple syrup, almond butter, almond milk, vanilla extract, baking powder, store-bought cookies, chocolate chips and chocolate hazelnut spread.

you can find all of these ingredients at any grocery store by the way! if there’s something you want to leave out, like the cookies and cream cookies, then go for it.

this would be yummy with the chocolate chips only or just the cookies, anything goes.

you can absolutely use Oreos for the cake if you would like! the ones that i used are Newman’s and it’s what i could find at sprouts!

i happen to love Trader Joe’s Joe Joe’s Slims Chocolate & Vanilla Creme Cookies too.

they’re not too thick, which would be great for the recipe because it makes folding in the cookie pieces easier and distributes well. 

you could also use Trader Joe’s regular Joe Joe’s or really any vegan chocolate and cream filled cookie from any grocery store- there are tons!

Ingredients

  • 1 cup almond flour

  • 1 oat cup flour

  • 1/3 cup maple syrup

  • 2 tsp vanilla extract

  • 1/3 cup runny almond butter

  • 2/3 cup almond milk

  • 1 tsp baking powder

  • 3/4 crushed cookies and cream cookies

  • 1/3 cup chocolate chips

  • vegan chocolate hazelnut spread

Directions

  • pre heat the oven to 350 degrees.
  • mix the batter ingredients until a thick batter forms. then, fold in the cookies and cream and chocolate chips.
  • bake at 350 degrees for 28 minutes.
  • cool the cake down completely and then add the chocolate hazelnut spread. add the toppings, cut into slices and enjoy!
  • store in the fridge in an airtight container and warm up before eating.
