not my birthday BUT, sprinkles are so fun and i just bought a huge new tub of them so…..here we are. Vegan Birthday Cake Bread is well, legit like cake! it tastes and smells like cake but ya know, in bread form! oh, so i have to mention, it’s FLOURLESS too! oats are the best and that’s what makes up the bulk of Vegan Birthday Cake Bread. you just add everything to a blender and then this perfect batter forms. after that, add the sprinkles aka the best part and there ya have it, the yummiest bread ever!
frosting isn’t necessary because Vegan Birthday Cake Bread is so good on its own BUT, cake and frosting (insert heart eyes emoji). it’s like avocado and toast, just better when they’re together.
decent sprinkles that are vegan can be kind of hard to find! i linked the ones i used here and i know that Whole Foods has a good rainbow sprinkles option too!

Vegan Birthday Cake BreadCourse: DessertDifficulty: Easy
3 cups old fashioned oats
1 tbsp flax meal
1 tsp baking powder
1/2 tsp apple cider vinegar
1/4 tsp almond extract (vanilla works)
3 tbsp creamy almond butter (any creamy nut or seed butter works)
1 tbsp room temp coconut oil
5 tbsp maple syrup
1 cup unsweetened almond milk (any dairy-free works)
1/3 cup sprinkles (or however much you want)
1/2 cup vegan cream cheese
dash of almond extract
2 tbsp maple syrup
- add all ingredients but the sprinkles to a blender.
- blend on high until a thick and smooth batter forms.
- fold in the sprinkles and then add to a parchment paper lined bread loaf pan.
- bake at 350 degrees for 32-35 minutes.
- cool completely and then add the frosting!
