Vegan Banana Oat Protein Mug Cake is the breakfast or dessert we all need in our lives. when there’s anything banana flavored and cake is involved, count me in. it incredibly delicious, nutritious, made with amazing ingredients, protein-packed and made in a blender.
does it get better than what i mentioned above? i think not!
you read that right, not only is this cake healthy and scrumptious, but it’s also made in the blender.

basically, Vegan Banana Oat Protein Mug Cake is banana bread in a ramekin and it’s a single or double serving recipe. there’s enough to fill two ramekins about halfway!
if your ramekin is on the larger side like mine though, you can just fill it all the way to the top with the banana batter!
by the way, i don’t call this a baked oats recipe because it’s a sturdy like a cake and bakes all the way through! it’s still a little chewy like baked oats, but definitely resembles a cake the most :).


you don’t need any flour for this cake either, just old fashioned oats. that’s why a blender is important, because you’re going to blend all of the ingredients into a cake batter.
if you’re wondering what that gooey deliciousness on top is, it’s a peanut butter caramel.
divine? absolutely, and it’s super easy to whip up! you just need runny peanut butter, maple syrup, vanilla extract and coconut oil.
it’s completely optional of course, but i do recommend it if you’re looking for a something a little more indulgent.
however, if this is something you’re making for breakfast and want to keep it on the lighter side, the cake is still really yummy without the peanut butter caramel.

an overripe medium large banana

Vegan Banana Oat Protein Mug Cake

Ingredients
- cake
1 cup old fashioned oats
1 scoop vanilla protein powder (31g)
1 tsp baking powder
1/2 tsp cinnamon
1 tsp vanilla extract
1 medium-large overripe banana
2 tbsp runny almond butter or any nut/seed butter
1/2 cup dairy free milk
- peanut butter caramel
2 tbsp runny peanut butter
1 tbsp maple syrup
1/4 tsp vanilla extract
1 tbsp melted coconut oil
Directions
- preheat the oven to 350 degrees.
- add the mug cake ingredients to a blender and blend until a thick batter forms.
- transfer to 1 or 2 ramekins and bake at 350 degrees for 30 minutes. if you don’t fill your ramekin to the top, you can bake yours a little less time, maybe 5 minutes.
- whisk the caramel ingredients together and drizzle on top of the mug cake. enjoy!
