Vegan and Gluten Free Vanilla Cake Stuffed Peaches is the new summer recipe on the block and if you’re as obsessed with peaches as i am, this recipe is an absolute must make.
there’s nothing more delicious than a fresh and ripe peach! there’s something so indulgent about them and they’re amazing for you.
once you top peaches with maple syrup, cinnamon and coconut sugar, then stuff them with cake, you’ll never go back to any other way of eating peaches.
oh, if you want to be extra fancy, add some vanilla ice cream on top. it is summer after all and there’s nothing more perfect than peaches and ice cream.
the peaches are coated with a drizzle of maple syrup and then sprinkled with cinnamon + coconut sugar.
they bake in the oven at 375 degrees for 17 minutes.
next, the vegan and gluten free vanilla cake batter is added to the center and you basically just dump it on top.
the peaches will bake in the oven another 17 minutes until the cake is moist and perfect.
since the cake is baking on top of fresh fruit, it will be a little “soggy” if you will. the moisture will create this no matter what, so it’s totally normal.
you won’t even notice though because the peaches and cake are baked to absolute perfection.

gluten free baking flour
coconut yogurt (used cocojune)
ice cream for topping if you want

- 7 fresh peach halves
maple syrup for drizzling on top
- 2 tbsp coconut sugar + 1 tsp cinnamon
- cake batter
1 cup gluten free 1:1 baking flour
1 tsp baking powder
1/2 cup + 1 tbsp creamy coconut yogurt (see text for brand)
1/4 cup maple syrup
1 tsp cinnamon
1 tsp vanilla extract
- vanilla df ice cream for topping
- preheat the oven to 375 degrees.
- drizzle a light coating of maple syrup on the peach halves and then sprinkle the cinnamon sugar coating on top.
- bake for 17 minutes and then mix together the vegan and gf vanilla cake ingredients.
- add a large spoonful to the top and bake another 17 minutes. cool down a bit, add vanilla ice cream on top and enjoy! should be eaten same day!
