it’s the most wonderful time of the year aka the time to make my Vegan and Gluten-Free Gingerbread Cream Cheese Mini Muffins! they’re adorable little bites of heaven and have the perfect holiday kick!
it’s always festive to make gingerbread anything this time of year and what a fun way to incorporate holiday flavors.
also, what’s better than cake-y muffins with cream cheese on top!? nothing if you ask me!
if you choose to make regular size muffins as opposed to the mini muffins, then the baking time will increase.
while i can’t give you an exact time because i have only made mini muffins, i would start with 22 minutes at 350 degrees and work from there.
you can always stick a toothpick or a knife in the muffins to determine if they’re done.
if the toothpick comes out clean, then you’re good to go!
as far as vegan cream cheeses, use whatever you want or have on hand! for this recipe, i went with tofutti as i find it’s very good for baking.
if you’re looking for something a little more decadent, turn the muffins into cupcakes by omitting the vegan cream cheese and frosting them once the muffins cool down.
vanilla frosting would be delicious or something with a little spice such as chai!

Vegan and Gluten-Free Gingerbread Cream Cheese Mini MuffinsCourse: Snacks
2 cups oat flour
1/2 cup almond flour
1 tsp baking powder
1 tsp baking soda
1/2 tbsp cinnamon
1/4 tsp nutmeg
1/4 tsp ground cloves
1/4 tsp ground ginger
1/3 cup coconut sugar
1/3 cup molasses
1/3 cup melted vegan butter
1/2 cup dairy free yogurt (used kite hill plain unsweetened)
1/3 cup dairy free milk
2 tsp vanilla extract
- vegan cream cheese for topping (about 6 ounces)
- preheat the oven to 350 degrees.
- then, mix the mini muffin ingredients in a bowl until a thick batter forms.
- add to well greased mini muffin tins and top with a small spoonful of vegan cream cheese.
- bake in the oven at 350 degrees for 13 minutes. cool down and enjoy!
