it’s the weekend, so we have to celebrate with Vegan and Gluten-Free Funfetti Protein Muffins because anything funfetti is the best. also, deliciously scrumptious sweet muffins that are packed with goodness and protein are the best too.
you’re going to love this recipe as it feels super decadent but the muffins are perfectly healthy enough for breakfast.
with a base of almond flour and gluten-free baking flour, the muffins take on a dense and fudgy texture, but they’re also fluffy at the same time.

also, the recipe calls for vanilla protein powder, hence the funfetti part.
vanilla protein powder and vanilla extract give the muffins a vanilla cake-like taste and are super important for the recipe.
the protein that i used is Garden of Life Vanilla. there’s 31g per scoop, which is important to take into account when measuring your ingredients out.
not all proteins call for the same amount of grams, so just keep that in mind!

as for the sprinkles, they’re such a cute and fun addition. you can use whatever you have on hand!
the brand i used is Watkin’s but i also love Supernatural sprinkles, which i buy on amazon.
when it comes to sprinkles, i look for two things- vegan sprinkles and ones that are made with better for you ingredients.
many sprinkles are made with confectioner’s glaze, which is not vegan actually!

gluten-free 1:1 baking flour (used Bob’s Red Mill)
baking powder
vanilla protein powder
vanilla extract
dairy free milk
maple syrup
sprinkles
that’s all you need, how easy is this recipe? the muffins keep well in the freezer by the way, so you can always store them for meal prep.
since my husband and i eat them fairly quickly, i like to keep the muffins in the fridge and warm them up before eating.

Vegan and Gluten-Free Funfetti Protein Muffins

1 cup gluten free 1:1 baking flour
1 cup almond flour
1 tsp baking powder
1/3 cup maple syrup
2 tsp vanilla extract
3 scoops vanilla protein powder (31g per scoop)
1 and 1/2 cups dairy free milk
1/3-1/2 cup sprinkles
Directions
- preheat the oven to 350 degrees.
- mix the batter ingredients together and then fold in the sprinkles.
- add to parchment muffin cups and fill to the top.
- bake at 350 degrees for 30 minutes. cool down completely and enjoy!
- store in the fridge or freezer in an airtight container.
