Vegan and Gluten Free Cosmic Brownies

Vegan and Gluten Free Cosmic Brownies are my newest creation and they are indeed the best dessert you’re going to ever have. Vegan and Gluten Free Cosmic Brownies bring back feelings of nostalgia and will make you happy the minute you take a bite.

if you want to bring back your childhood (if you’re a late 90s and early 2000s kid), then you have to make my Vegan and Gluten Free Cosmic Brownies.

you won’t believe how simple the ingredients are and how easy they are to put together.

with ingredients like cocoa powder, gluten free baking flour, coconut yogurt, vegan butter and more, the brownies come together amazingly.

you can bake the cosmic brownies in an 8 x 8 square baking pan. they’re meant to be cut into small square pieces, so you will get a lot out of each batch.

as for the sprinkles, as you can probably tell, i did not use your typical cosmic brownie sprinkles.

I just could not find any that were vegan but i also didn’t search too in depth!

however, i am perfectly content with using the ones that i did because not only are they vegan, but more natural and the colors are beautiful.

that’s the appeal with sprinkles, you want some that really stand out and are fun to look at :).

Vegan and Gluten Free Cosmic Brownies are easily whipped up in a large mixing bowl and the batter is THICK.

thick enough that you could make brownie bites or balls out of the batter.

then, for the frosting, i took a bit of a shortcut because that’s just how i roll with frosting most of the time, lol.

i like to choose a high quality chocolate frosting with ingredients that are real. simple mills is my go to!

then, to make the frosting even more chocolatey and give it a richer flavor, i added cocoa powder. you only need a couple of tbsp!

here’s everything you need to make Vegan and Gluten Free Cosmic Brownies

gluten free 1:1 baking flour (used bob’s red mill)

tapioca flour

sea salt

cocoa powder

organic raw cane sugar (used my favorite, Florida Crystals Sugar)

coconut yogurt (used cocojune)

vegan butter (used miyoko’s)

vanilla extract

runny almond butter

chocolate chips

coconut oil

store bought chocolate frosting

sprinkles

Ingredients

  • brownies
  • 2/3ย cup gluten free 1:1 baking flour

  • 1 tbspย tapioca flour

  • 1/4 tsp sea salt

  • 2/3 cup organic cane sugar

  • 2/3 cup cocoa powder

  • 1/3 cup coconut yogurt

  • 4 ounces melted vegan butter

  • 1 tsp vanilla extract

  • 1/3 cup runny almond butter

  • 1/3 cup chocolate chips melted with 1 tbsp coconut oil

  • store bought chocolate frosting + 2 tbsp cocoa powder
  • store bought sprinkles

Directions

  • preheat the oven to 350 degrees.
  • mix the brownie ingredients in a bowl until a thick batter forms. add to a parchment lined 8 x 8 baking pan.
  • then, bake at 350 degrees for 24 minutes. cool the brownies down completely.
  • mix the chocolate frosting with cocoa powder in a food processor until it is well-combined.
  • then, add sprinkles to the top and place in the freezer to set about 15 minutes (just so the frosting hardens).
  • cut into small pieces and enjoy! you can store in an airtight container at room temp or in the fridge.
