this Vegan and Gluten Free Chickpea Cookie Dough recipe is sooo easy and delicious!
not only is it packed with protein from the chickpeas and made with healthy ingredients, but it tastes amazing and that’s key.
i flavored the cookie dough with vanilla extract, almond butter, and maple syrup! i think it gives it the perfect cookie dough taste!
i used almond butter because i wanted a neutral taste, but peanut butter would be a fantastic replacement if you wanted a peanut butter flavor.
any kind of nut or seed butter will work though, that’s the beauty of them.
is it even cookie dough without some chocolate chips?! you can use any dairy free brand that you want.
i folded the chocolate chips into the blended dough mixture to make sure they are perfectly distributed!
if you’re not a huge chocolate chip fan, you could substitute it for sprinkles, too. funfetti is always a good time.
you could even add freeze dried strawberries or another fruit as the base is very versatile.
i used an ice cream scoop to get the PERFECT serving portions.

Vegan and Gluten Free Chickpea Cookie DoughCourse: Snacks
1/2 cup oat flour
1/4 cup coconut flour
1 can chickpeas rinsed and drained
1 tbsp vanilla extract
1/4 cup runny almond butter
1/4 cup maple syrup
2 tbsp dairy free milk
1/2 cup chocolate chips
- blend all cookie dough ingredients except the chocolate chips in a food processor.
- fold the chocolate chips into the cookie dough mixture.
- store in fridge in an airtight containter and enjoy!
