Ingredients
2 and 1/4 cups gluten-free measure-for-measure flour
1 cup warm water
1 packet yeast
3 tbsp avocado oil
2 tbsp sugar or lakanto substitute
1 tsp sea salt
vegan mozzarella cheese (as much as desired)
1 pack vegan bacon (cooked according to package directions)
1 large honeycrisp apple, sliced
3 tbsp maple syrup
3 tbsp avocado oil
1 tsp cinnamon
chopped pecans for topping
Directions
- start by making the flatbread. in a bowl, mix the warm water, yeast, sugar (or lakanto substitute), and let it sit for about 5 minutes until it becomes frothy. then, add the oil and mix again.
- add the gluten-free measure-for-measure flour, avocado oil, and sea salt to the yeast mixture. mix until a dough forms. knead for a couple of minutes and let it sit covered for about 30 minutes.
- roll out the dough into a flatbread shape and bake at 400 degrees for 10 minutes. remove it from the oven.
top the partially baked flatbread with as much vegan mozzarella cheese as desired.
return the flatbread to the oven and bake for an additional 5 minutes or more until the cheese is bubbly. - while the flatbread is baking, prepare the vegan bacon according to package directions.
in a separate pan, sauté the sliced honeycrisp apple in 3 tbsp of maple syrup, 3 tbsp of avocado oil, and 1 tsp of cinnamon on medium heat for about 7 minutes or until they’re caramelized. - once the flatbread is done, remove it from the oven and top it with the cooked vegan bacon and maple sautéed apples.
