Vegan and Gluten Free Brownie Cookie Cake is the new recipe on the block and it’s one you don’t want to miss out on! as if cookie cake isn’t delicious enough, this fudgy brownie take on it is out of this world.
there’s lots of chocolate in this cake. the base is made with cocoa powder and you know i added chocolate chips into the batter.
then, i used a store-bought chocolate frosting and the indulgence level is fabulous.

aside from the taste, the next best part about my desserts is the ease of making them along with the minimal use of ingredients.
the base is made with gluten free all purpose flour and almond flour, plus there’s a decent amount of almond butter in there, which brings on the fudgy-ness.

the cake bakes in the oven for 25-27 minutes at 350 degrees and also stores really well in the freezer.
in fact, we recently ate the last piece that was in there. well, not really we, i ate the last piece and gave Alex a bite lol.
the cookie cake is honestly the best texture ever! it’s super sturdy, so you can eat it like a cookie, but it’s also pretty fudgy.

gluten free all purpose flour
store bought chocolate frosting
for the store-bought chocolate frosting, i used simple mills, but use whatever brand you love! you could even make your own frosting.
if you don’t want to do that, a chocolate ganache would be delicious. you could melt chocolate chips with coconut oil and drizzle that on top.

1 cup almond flour
1/2 cup gluten free all purpose flour
1/2 cup cocoa powder
1/4 cup coconut yogurt
1/4 cup maple syrup
1/4 cup dairy free milk
3/4 cup runny almond butter
1/2 cup chocolate chips
- store bought chocolate frosting and sprinkles
- preheat the oven to 350 degrees.
- mix the cake ingredients together well until a thick batter forms. fold in the chocolate chips.
- transfer to a greased or parchment lined 8 x 8 round cake pan and bake at 350 degrees for 25-27 minutes.
- cool completely, frost the cake and add sprinkles. store in the fridge or freezer in an airtight container and enjoy!
